Vegan Quesadilla with Spelt Flour Wrap
Alter amounts based on how many eating-
Spices- Chilli Power, Cumin, Cayenne Pepper, Paprika, Oregano
Salt and Pepper to taste
Bosh all these into a pan until cooked.
Vegan cheese for cooking
Spelt Flour Wraps (Inspired by the Whole Food Diary):
204g of Spelt Flour
1/2 teaspoon of Himalayan salt
1/2 teaspoon of baking powder
Half teaspoon of Avocado Oil
119ml of Warm Water
Mix together all the dry ingredients, followed by the oil and water. Stir until sticky then use your hand to pull it all together. (Add a little flour to make it handle-able if you need but it should be fine.) Still in a bowl use your hands to knead it for about 30 seconds to a minute. Then let it rest for half an hour.
Cut the dough to the size you need, in this case the size of your frying fan- the roll them out on a lightly flowered surface.
Heat at a medium to high heat until they start to get crispy - repeat on the other wraps.
Lightly oil your frying pan, place the wrap down followed by some pieces of Vegan cheese. Then place the mixture on the wrap followed by some more cheese and the topper wrap.
After several minutes flip the quesadilla and wait until you think all the cheese is melted.
Serve with a salad, guacamole and hot sauce.
